Recipe for success: Grilled Peach sorbet

During a quick stop at the store the other day, the aroma and display of perfectly ripe peaches demanded my attention and respect. While I do love eating a fresh peach, I thought whipping up a peach sorbet would be fun and make the most of the waning hot days of summer. I was thinking about heating the peaches to really bring out the sweetness when a bolt of inspiration struck - what if I grilled the peaches?!? I mean, if you were presented with peach sorbet or grilled peach sorbet - what would you pick? (Ahem, pick the grilled peach sorbet.)


  1. Assemble the ingredients:
    8 ripe peaches, halved and pitted
    1 cup water
    1 cup granulated sugar


  2. Grill the peaches until they are softened and the sugars are bubbling.
  3. Remove the peach skins and set aside for the simple syrup mix. Puree the warm peaches in a blender.

  4. Mix the water, sugar and peach skins in a saucepan and bring to a boil for a few minutes. Cool the simply sugar mix and strain out the peach skins.
  5. Add the simple sugar mix to the blended peaches (to taste). Cool the concoction in the fridge for a few hours or overnight.

  6. Freeze in your ice cream maker.

SPOILER ALERT: The result? My sorbet tester thought it was good, but tasted like frozen peach puree...which is exactly. what. it. is. So perhaps you can forgo the grilling and the ice cream maker and just puree some peaches, add some sugar, pop it in the freezer and call it a day.

  1. I wonder if a simple mint-rum syrup added in would have punched it up a notch? I love grilled peaches with mint-rum syrup drizzled on top.
