*Linked list: Kitchen Mistakes

This weekend I ran across a cool link on kitchen mistakes and the underlying culprits over at Cooking Light. Check it out here.

In related news, this weekend we had a family dinner with Daniel's family and we served...mushy kebabs. We've made these particular kebabs hundreds of times, so it was driving me crazy what caused the culinary mishap. A little research and I found out that fresh pineapple juice (which we included in the marinade for the first time ever) contains an enzyme, bromelain, which is a meat tenderizer. You've got three options if you are thinking of using pineapple juice in marinades: 1) Use fresh pineapple juice and don't let it marinade for more than 30 minutes - a little tenderizer, but not too much; 2) Use cooked or canned pineapple juice, which lacks the enzyme because the heat used in both of these forms of pineapple change the enzyme; 3) steer clear of pineapple juice in meat marinades.

Seconds Coming

Americans reportedly waste 40% of our food. The 40 down project
is my personal plan to reduce our household food waste.

There's always those recipes where you know one ingredient is going to sit in the fridge, hidden, until you discover the moldy/rotten/expired package tucked in the back of the crisper. I know, you had every intention of using that. I'm not judging. Let's take those perishable ingredients and use them up in a second round of cooking before they have a chance to go bad (click the links to get the recipes):

Pumpkin bread - pumpkin filling - Pumpkin ravioli
Gourmet grilled cheese - collection of good (expensive) cheeses - Mac & cheese
Citrus salad - basil - Pesto
Crostini - bread - Homemade croutons
Chicken and dumplings - parsley - Chimichurri

This isn't an original thought - here's other ways to use up leftovers:
Thanksgiving feast . Food Network
Roast beef exclusives . Cooks.com
Common ingredients . Whole Living
Rice exclusives . The Guardian
Easter ham . Real Simple
British style . BBC Good Food

*Linked list: Spring Clean - The Office

I am sick and tired of the stacks of paper.

They've been piling up in my home office since the filing cabinet reached its maximum capacity and I think its messing with the office mojo I've worked so hard to achieve. Maybe the chi or feng shui or something clever and Eastern is all outta whack, but either way, it is definitely affecting my ability to work amongst the clutter. For many reasons, no good one to call out specifically, I decided to do something about it tonight.

To do this I had to face the fact that I am a document hoarder. If you asked to see a Walgreen's receipt for cough medicine from 2002, I probably have it. Who even knows if I could locate it, but I have it. I've fully admitted to myself that I'm stashing documents that no one will ever care about. To remedy this I have my little shredder working harder than investment banking companies heading into a Senate Hearing (lets all pretend that analogy was funny and made sense.) The poor thing is actually overheated and so we both - the shredder and I - decided to call it a night.

Before beginning my take-no-prisoners 2012 Spring Clean, I did a bit of online research as to what should be kept and what is best used a gerbil bedding. Fortunately, it seems many people have this packrat gene when it comes to financial documentation, so the advice was free flowing:
So, goodbye 2002 Walgreen's receipt, you will not be missed. I feel lighter already.
