Last night we did a 5 course Chef's tasting menu at Niche restaurant located in the Benton Park neighborhood of St. Louis. The restaurant was cozy with modern decor and the chef, Gerald Craft, was just listed as one of Food&Wine's best new chefs. This time, I scored the tasting menu and immediately wrote notes so there will be none of the "I can't really remember" going on in this list. To begin:
1) Parsnip consomme with bacon and grapefruit pearls and brown butter foam.
2) Fried brandade (crab cake) with a sunny side up egg, mustard greens and lemon sauce
3) A take on the reuben: Rye gnocchi, pickled mustard seeds, fried pig's tongue, horseradish
4) Intermezzo: carrot and lime sorbet
5) Lamb with rhubarb sauce, white chocolate with hummus, mushrooms and garlic foam
6) Coconut Kulfi with passion fruit glazed pineapple and granola
